12 year old Mortlach Whisky

We started with an 11.5-year-old Mortlach single malt—known for its bold, meaty character and rich complexity. Rather than bottle it as-is, we saw an opportunity to elevate and deepen the flavour by giving it a carefully considered secondary maturation.

So, for the final six months of its 12-year journey, we finished the whisky in a variety of sherry-seasoned casks sourced from Jerez, Spain:

• European oak Oloroso

• American oak Oloroso

• European oak Pedro Ximénez (PX)

• American oak Pedro Ximénez (PX)

Each cask type brings something unique to the final profile:

European oak contributes structure, spice, and tannic grip—with notes of clove, dark chocolate, and dried fruits.

American oak lends a softer, sweeter profile—think vanilla, toffee, and ripe orchard fruit.

Oloroso sherry offers nutty, dry, oxidative richness, with flavours of roasted hazelnuts, leather, and orange peel.

PX sherry is luscious and sweet, bringing fig, date, molasses, and rich dessert notes.

By finishing the whisky across all four cask types, we created layers of complexity without overpowering Mortlach’s core DNA.

Once the six-month finish was complete, we brought all the components together into a single, unified blend—so although it spent time in different casks, it remains a true single malt, from one distillery and one distillation.
